PEPPERMINT CHOCOLATE CHIA PUDDING
Chia pudding is a favorite in our house, especially as a quick breakfast option! I took my basic chocolate chia pudding recipe and added a little kick to it with Young Living peppermint oil. I let it set overnight in the fridge and enjoyed it for breakfast the next morning. I topped it with shredded coconut and frozen blueberries - it may sound like a weird combo, but the cold blueberries brought out the peppermint flavor in a very refreshing way!
1 Cup Organic Almond Milk (or Coconut)
1/3 Cup Organic Chia Seeds
2 TBSP Organic Raw Cacao Powder
2 TBSP Organic Honey
1 TSP Organic Vanilla Extract
1-2 Drops YL Peppermint Oil
Place all ingredients in a bowl and whisk together until smooth. Add 1-2 drops of YL peppermint oil and stir well. Put bowl in refrigerator for at least an hour to set. Take out, top with coconut, fruit, nuts, etc and ENJOY!
